Tiramisu

Ingredients:

60g / 2ozcaster sugar
100ml / 3.5 fl ozvery strong black coffee
6 tbspmarsala or sweet sherry
16sponge fingers
3eggs
250g / 8ozmarscapone cheese
60g / 2ozplain chocolate, grated
1 pinchnutmeg
30g / 1ozicing sugar

  1. Separate the eggs into yolks and whites.
  2. Stir half the sugar into the coffee. That coffee should be sweet.
  3. Add the sherry to the coffee. (Sorry, but it doesn't work well with irish coffee...)
  4. Arrange 8 of the sponge fingers in the bottom of an 8" round bowl.
  5. Drizzle half the coffee mixture over the sponge fingers. (The ones in the bowl, silly)
  6. Beat the egg yolks and the rest of the sugar until thick.
  7. Add the marscapone cheese to the egg yolk/sugar mixture.
  8. Beat the egg whites until stiff, then add to the rest of the eggy/cheesy mixture.
  9. Add the nutmug.
  10. Spoon over the sponge fingers.
  11. Dip the rest of the sponge fingers into the coffee and arrange them in the bowl.
  12. Cover with the eggy cheesy mixture. (Well, what else can you call it?)
  13. Sprinkle with icing sugar and grated chocolate.
  14. Leave in fridge for at least 2 hours, and ideally overnight.
  15. Eat.
