Tiramisu
Ingredients:
| 60g / 2oz | caster sugar |
| 100ml / 3.5 fl oz | very strong black coffee |
| 6 tbsp | marsala or sweet sherry |
| 16 | sponge fingers |
| 3 | eggs |
| 250g / 8oz | marscapone cheese |
| 60g / 2oz | plain chocolate, grated |
| 1 pinch | nutmeg |
| 30g / 1oz | icing sugar |
- Separate the eggs into yolks and whites.
- Stir half the sugar into the coffee. That coffee should be sweet.
- Add the sherry to the coffee. (Sorry, but it doesn't work well with irish coffee...)
- Arrange 8 of the sponge fingers in the bottom of an 8" round bowl.
- Drizzle half the coffee mixture over the sponge fingers. (The ones in the bowl, silly)
- Beat the egg yolks and the rest of the sugar until thick.
- Add the marscapone cheese to the egg yolk/sugar mixture.
- Beat the egg whites until stiff, then add to the rest of the eggy/cheesy mixture.
- Add the nutmug.
- Spoon over the sponge fingers.
- Dip the rest of the sponge fingers into the coffee and arrange them in the bowl.
- Cover with the eggy cheesy mixture. (Well, what else can you call it?)
- Sprinkle with icing sugar and grated chocolate.
- Leave in fridge for at least 2 hours, and ideally overnight.
- Eat.
